A cooling, protein-rich Indian yogurt side dish where crunchy roasted makhana (fox nuts) meets creamy spiced curd โ€” quick to make and a refreshing pairing with biryani, pulao, or parathas.

  1. Roast the makhana until crisp: Heat 1 teaspoons ghee or oil ghee in a pan on low flame. Add 1 cups makhana (fox nuts) makhana and dry roast, stirring frequently, for 4โ€“5 minutes 05:00 until crisp. To test, let one piece cool for a few seconds and crush it between your fingers โ€” it should snap cleanly with no chewiness. Turn off heat and let the makhana cool completely on a plate; roasting it fully is what keeps the raita from turning soggy.
  2. Whisk the curd smooth: In a mixing bowl, add 2 cups plain thick curd (yogurt) curd and whisk it smooth with a spoon or whisk until there are no lumps. If it feels very thick, whisk in 2 tablespoons milk or water, as needed to thin milk a tablespoon at a time until it's a smooth, pourable-but-still-thick consistency (similar to a milkshake).
  3. Season the curd: Add 0.5 teaspoons roasted cumin powder roasted cumin powder, 0.5 teaspoons red chilli powder red chilli powder, 0.5 teaspoons chaat masala chaat masala, 0.3 teaspoons black salt black salt, and 0.3 teaspoons regular salt (adjust to taste) regular salt to the whisked curd. Add the 1 green chilli, finely chopped (optional) chopped green chilli if using. Mix everything together well and taste โ€” adjust salt or spice as you like.
  4. Add the makhana (crunchy or soft โ€” your choice): Once the roasted makhana has cooled fully, decide on texture: for a crunchy raita, keep it aside until just before serving; for a softer, traditional raita, fold it into the seasoned curd now and let the bowl sit for 5โ€“10 minutes 10:00 so the makhana softens and soaks up flavor.
  5. Fold makhana into the curd: If you kept the makhana aside for crunch, fold it into the curd mixture right before you're ready to serve. Either way, gently mix so the makhana pieces stay mostly whole rather than getting crushed.
  6. Garnish and serve: Transfer the raita to a serving bowl. Sprinkle the 2 tablespoons coriander leaves, chopped chopped coriander leaves on top, along with a light pinch of 0.3 teaspoons pinch red chilli powder, for garnish red chilli powder for color. Serve chilled or at room temperature alongside biryani, pulao, paratha, or any Indian meal.


Notes:


Tips for beginners:


  1. The texture is a personal choice: fold in the roasted makhana right before serving for a crunchy raita, or stir it in 10 minutes ahead and let it sit so the makhana softens and soaks up the yogurt, more like a traditional boondi raita.
  2. Don't use plain water to thin the curd if you can help it โ€” a little milk keeps the raita creamy instead of watery.
  3. If making this for a fasting (vrat) day, skip the regular salt and use only sendha namak (rock salt) plus black salt.
  4. For extra flavor, you can temper the raita: heat a teaspoon of ghee, add a pinch of cumin seeds and a dry red chilli until they sizzle, then pour this over the finished raita just before serving.
