GT Makhana Masala Curry:
A rich North Indian style curry with crisp roasted makhana (fox nuts) simmered in a spiced onion-tomato-cashew gravy โ a restaurant-style vegetarian main course that pairs perfectly with roti or rice.

Ingredients:
- 2 cups makhana (fox nuts)
- 3 tablespoons ghee or oil, divided
- 1 cups onion, roughly chopped
- 1.5 cups tomatoes, roughly chopped
- 10 cashews
- 1 tablespoons ginger, roughly chopped
- 4 garlic cloves
- 1 green chilli, roughly chopped
- 1 teaspoons cumin seeds
- 1 bay leaf
- 1 teaspoons red chilli powder
- 0.5 teaspoons turmeric powder
- 1 teaspoons coriander powder
- 1 teaspoons garam masala
- 1 teaspoons salt (adjust to taste)
- 1 cups water, plus more as needed
- 2 tablespoons fresh cream (optional, for garnish)
- 2 tablespoons coriander leaves, chopped, for garnish
- 0.5 teaspoons kasuri methi (dried fenugreek leaves), crushed
Steps:
- Roast the makhana until crisp: Heat 1 tbsp of the 3 tablespoons ghee or oil, divided ghee in a pan on low-medium heat. Add 2 cups makhana (fox nuts) makhana and roast, stirring constantly, for 6โ8 minutes 08:00 until crisp and hollow-sounding when tapped. Remove and set aside on a plate โ don't let them brown or burn.
- Sautรฉ onions, cashews, and aromatics: In the same pan, heat 1 tbsp more 3 tablespoons ghee or oil, divided ghee. Add the 1 cups onion, roughly chopped onion, 10 cashews cashews, 1 tablespoons ginger, roughly chopped ginger, 4 garlic cloves garlic, and 1 green chilli, roughly chopped green chilli. Sautรฉ on medium heat for 4โ5 minutes 05:00 , stirring often, until the onions turn soft and light golden.
- Add tomatoes and cook until soft: Add the 1.5 cups tomatoes, roughly chopped chopped tomatoes to the pan and cook for 3โ4 minutes 04:00 until they soften and turn mushy. Turn off the heat and let this mixture cool for a few minutes.
- Blend into a smooth paste: Transfer the cooled onion-tomato-cashew mixture to a blender and blend into a smooth, thick paste, adding a splash of water only if needed to help it blend. Set the paste aside.
- Temper the cumin and bay leaf: Heat the remaining 1 tbsp 3 tablespoons ghee or oil, divided ghee in the same pan on medium heat. Add 1 teaspoons cumin seeds cumin seeds and 1 bay leaf bay leaf, and let them sizzle for a few seconds until fragrant.
- Cook the masala base until oil separates: Pour the blended onion-tomato paste into the pan carefully, as it may splutter. Add 1 teaspoons red chilli powder red chilli powder, 0.5 teaspoons turmeric powder turmeric, 1 teaspoons coriander powder coriander powder, and 1 teaspoons salt (adjust to taste) salt. Cook on medium-low heat for 5โ6 minutes 06:00, stirring occasionally, until the mixture thickens and you see a little oil separating at the edges of the pan โ this means the raw masala smell is gone and the gravy base is fully cooked.
- Add water and simmer the gravy: Add 1 cups water, plus more as needed water to the pan and stir well to reach your desired gravy consistency. Bring to a gentle simmer and cook for 3โ4 minutes 04:00.
- Add makhana and simmer briefly: Add the roasted makhana to the simmering gravy and stir gently to coat. Add 1 teaspoons garam masala garam masala and the crushed 0.5 teaspoons kasuri methi (dried fenugreek leaves), crushed kasuri methi. Simmer for just 2โ3 minutes 03:00โ long enough for the makhana to soak up some flavor while staying slightly crisp. Do not overcook at this stage.
- Garnish and serve: Turn off the heat. Drizzle 2 tablespoons fresh cream (optional, for garnish) fresh cream over the top if using, and sprinkle with 2 tablespoons coriander leaves, chopped, for garnish chopped coriander leaves. Serve hot with roti, naan, or steamed rice.
Notes:
Tips for beginners:
- Add the roasted makhana to the gravy only at the very end and simmer briefly if it sits too long in the liquid, it turns mushy instead of staying pleasantly firm with a slight bite.
- Cook the onions until truly golden-brown, not just translucent this is what gives the gravy its deep flavor and color, so don't rush this step.
- If the gravy tastes slightly sour or raw after adding tomatoes, it just needs a few more minutes of cooking until the oil visibly separates at the edges of the pan that's the sign the masala is fully cooked.
- Adjust the final consistency with water add a little more for a thinner gravy, or simmer uncovered a bit longer for a thicker one.
