Makhana Paratha:
A wholesome Indian flatbread stuffed with a spiced, crumbled makhana (fox nut) filling โ crispy roasted makhana adds protein and a subtle nutty flavor to a soft whole-wheat paratha. Great for breakfast or lunchbox.

Ingredients
- 2 cups whole wheat flour (atta), plus extra for dusting
- 0.5 cups water, approximately, for the dough
- 0.5 teaspoons salt, divided
- 1 teaspoons oil, for the dough
- 2 cups makhana (fox nuts)
- 1 tablespoons ghee or oil, for roasting makhana and cooking parathas, divided
- 0.5 cups onion, finely chopped (optional)
- 1 green chilli, finely chopped (optional)
- 1 teaspoons ginger, grated
- 0.5 teaspoons cumin seeds
- 0.5 teaspoons red chilli powder
- 0.5 teaspoons turmeric powder
- 0.5 teaspoons coriander powder
- 0.5 teaspoons garam masala
- 2 tablespoons coriander leaves, chopped
- 3 tablespoons ghee or oil, for pan-frying parathas
Steps:
- Make and rest the dough: In a large bowl, add 2 cups whole wheat flour (atta), plus extra for dusting whole wheat flour and half of the 0.5 teaspoons salt, divided salt. Add 1 teaspoons oil, for the dough oil and rub it in with your fingers. Gradually add 0.5 cups water, approximately, for the dough water, a little at a time, and knead into a soft, smooth dough (similar softness to your earlobe). Cover with a damp cloth and set aside to rest for at least 15 minutes 15:00 โ this makes the dough easier to roll later.
- Roast the makhana until crisp: While the dough rests, heat 1 tbsp 1 tablespoons ghee or oil, for roasting makhana and cooking parathas, divided ghee in a pan on low-medium heat. Add 2 cups makhana (fox nuts) makhana and roast, stirring constantly, for 6โ8 minutes 08:00 until they turn crisp and sound hollow when tapped. Turn off heat and let them cool completely โ warm makhana will turn chewy instead of crumbly when crushed.
- Crush the cooled makhana: Once fully cooled, crush the roasted makhana into a coarse, slightly sandy texture using your hands, a rolling pin, or a few quick pulses in a blender. Don't grind it into a fine powder โ some texture is what gives the paratha its bite.
- Sautรฉ the aromatics (optional but recommended): In the same pan, heat any remaining 1 tablespoons ghee or oil, for roasting makhana and cooking parathas, divided ghee on low-medium heat. Add 0.5 teaspoons cumin seeds cumin seeds and let them sizzle for a few seconds. Add 0.5 cups onion, finely chopped (optional) onion, 1 green chilli, finely chopped (optional) green chilli, and 1 teaspoons ginger, grated grated ginger if using, and sautรฉ for 2โ3 minutes 03:00 until the onion softens slightly.
- Add the spices: Add 0.5 teaspoons red chilli powder red chilli powder, 0.5 teaspoons turmeric powder turmeric, 0.5 teaspoons coriander powder coriander powder, 0.5 teaspoons garam masala garam masala, and the remaining 0.5 teaspoons salt, divided salt to the pan. Stir for a few seconds until fragrant, then turn off the heat.
- Combine filling and let it cool: Add the crushed makhana to the pan with the spice mix and toss well until evenly coated. Stir in 2 tablespoons coriander leaves, chopped coriander leaves. Taste and adjust salt if needed. Let this filling cool to room temperature before stuffing โ hot filling makes the dough hard to work with.
- Roll dough and add filling: Divide the rested dough into 8 equal balls (for 4 parathas, you'll use 2 balls per paratha โ one as a base, one as a lid). Roll one ball into a small disc about 4 inches wide. Place 2โ3 tablespoons of the cooled makhana filling in the center.
- Seal the stuffed paratha: Roll a second dough ball into a same-sized disc and place it on top of the filling like a lid. Pinch and seal the edges firmly all around so no filling leaks out.
- Roll out the stuffed paratha: Dust the stuffed dough generously with dry flour. Gently roll it out into a 6โ7 inch circle, applying light, even pressure and rotating it as you go. If the filling pokes through anywhere, dust with a bit more flour and continue rolling gently. Repeat with the remaining dough and filling to make 4 stuffed parathas.
- Cook the paratha with ghee: Heat a flat pan (tawa) on medium heat. Place the rolled paratha on it. Cook for about 3 minutes 03:00 until small bubbles appear on the surface, then flip. Spread about 1โ2 teaspoons of 3 tablespoons ghee or oil, for pan-frying parathas ghee over the cooked side, flip again, and spread ghee on the other side too. Press gently with a spatula around the edges and cook for 2โ3 minutes total, flipping once or twice more, until both sides have golden-brown spots.
- Serve hot: Remove from the pan and repeat with the remaining parathas, keeping cooked ones covered with a clean cloth to stay soft. Serve hot with curd, pickle, or butter.
Notes
Tips for beginners:
- The filling must be completely dry and crumbly, not moist \u2014 any wetness will tear the dough while rolling. Roasting the makhana thoroughly and letting it cool fully before crushing is what prevents this.
- Don't overfill each dough ball \u2014 too much stuffing makes it hard to seal and roll without tearing. If it tears anyway, just patch it with a small extra piece of dough and dust with more flour.
- Roll gently and evenly, applying light pressure, and dust with flour whenever the dough feels sticky.
- Cook parathas on medium heat, not high \u2014 high heat browns the outside before the inside cooks through.
