Jaggery Makhana Balls (Gur Makhana Ladoo):
A traditional no-refined-sugar Indian sweet made with crunchy roasted makhana (fox nuts) bound together in melted jaggery syrup โ naturally sweetened, ready in under 30 minutes, and a popular winter/festival treat.

Ingredients:
- 2 cups makhana (fox nuts)
- 2 tablespoons ghee, divided
- 1 cups jaggery (grated or chopped small)
- 2 tablespoons water
- 0.3 cups chopped almonds or cashews (optional)
- 2 tablespoons melon seeds or pumpkin seeds (optional)
- 0.5 teaspoons cardamom powder
- 0.1 teaspoons pinch of salt
Steps:
- Roast the makhana until crisp: Heat 1 tbsp of the 2 tablespoons ghee, divided ghee in a heavy-bottomed pan on low-medium heat. Add 2 cups makhana (fox nuts) makhana and roast, stirring constantly, for 6โ8 minutes 08:00 until they turn crisp and sound hollow when tapped together. Do not let them brown or burn. Turn off heat and transfer to a large mixing bowl to cool completely.
- Toast the nuts and seeds (optional): In the same pan, dry roast the 0.3 cups chopped almonds or cashews (optional) chopped almonds/cashews and 2 tablespoons melon seeds or pumpkin seeds (optional) melon seeds for 1โ2 minutes 02:00 on low heat until lightly golden and fragrant. Set aside in the same bowl with the cooled makhana.
- Lightly crush some of the makhana: Once the makhana has cooled, crush about a third of it lightly with your hands or a rolling pin, leaving the rest whole โ this mix of crushed and whole pieces helps the balls hold together while keeping some crunch.
- Melt the jaggery into a syrup: In the same pan, add the remaining 1 tbsp 2 tablespoons ghee, divided ghee and the 1 cups jaggery (grated or chopped small) jaggery along with 2 tablespoons water water. Heat on low flame, stirring gently, until the jaggery melts completely into a smooth syrup. Keep a small bowl of water next to the stove for testing.
- Cook and test the syrup (soft-ball stage): Let the jaggery syrup simmer on low heat for 3โ5 minutes 05:00, stirring occasionally. To check if it's ready, drop a small bit of syrup into the bowl of water โ if it firms up into a soft, pliable ball that you can pick up between your fingers (not dissolve, not turn brittle), the syrup is ready. If it dissolves in the water, cook a little longer; if it turns hard and cracks immediately, it's overcooked โ start a fresh batch if this happens.
- Turn off heat and flavor the syrup: As soon as the syrup reaches the right stage, turn off the heat immediately. Stir in 0.5 teaspoons cardamom powder cardamom powder and 0.1 teaspoons pinch of salt pinch of salt.
- Combine makhana with the hot syrup: Working quickly, pour the hot jaggery syrup over the roasted makhana and toasted nuts in the mixing bowl. Mix well with a spatula until every piece is evenly coated and sticky.
- Shape into balls while warm: While the mixture is still warm (not hot enough to burn your hands, but before it fully hardens), grease your palms with a little ghee. Take a small handful and press firmly, shaping into a round ball about the size of a small lime. Repeat quickly with the rest โ you should get about 12 balls. Work fast, as the mixture firms up as it cools.
- Let them cool and set: Place the shaped balls on a plate or tray and let them cool completely and set at room temperature for about 20โ20 minutes 20:00 before handling or storing. Store in an airtight container at room temperature for up to 2 weeks.
Notes:
Tips for beginners:
- The single biggest key to success is the jaggery syrup consistency โ undercooked syrup won't hold the balls together, overcooked syrup turns hard and brittle before you can shape them. Test with the drop-in-water method described in the steps; don't skip it.
- Work fast once the syrup is ready โ jaggery syrup firms up quickly as it cools, so have your roasted makhana and nuts measured and ready beforehand.
- Grease your palms generously with ghee before shaping, and if the mixture hardens too much to shape mid-way, warm it very briefly on low heat to soften again.
- If you don't have a candy/sugar thermometer, the water-drop test below works perfectly well and is how this is traditionally done at home.
