Ingredients
- 2 cups makhana (fox nuts)
- 1 tablespoons ghee or oil, divided
- 0.5 teaspoons turmeric powder
- 1 teaspoons red chilli powder
- 1 teaspoons chaat masala, divided
- 0.3 teaspoons black salt, divided
- 0.5 cups onion, finely chopped
- 0.5 cups tomato, deseeded and finely chopped
- 0.3 cups cucumber, finely chopped
- 0.3 cups roasted peanuts
- 2.5 tablespoons green (mint-coriander) chutney
- 2.5 tablespoons sweet tamarind-date chutney
- 1 tablespoons lime juice
- 0.3 cups thin sev
- 2.5 tablespoons coriander leaves, chopped
- 2 tablespoons pomegranate arils
Steps
- Roast the makhana until crisp: Heat 1.5 teaspoons of the 1 tablespoons ghee or oil, divided ghee in a wide pan on low flame until melted. Add 2 cups makhana (fox nuts) makhana and dry roast on very low heat for 4โ5 minutes 05:00, stirring often so nothing burns. To check if it's ready, take one piece out, let it cool a few seconds, and crush it between your fingers โ it should break with a clean, crisp snap. If it feels chewy or soft, keep roasting a bit longer. Transfer to a plate and let it cool completely.
- Bloom the spices: In the same pan on low heat, add the remaining 1 tablespoons ghee or oil, divided ghee along with 1 teaspoons red chilli powder red chilli powder, 0.5 teaspoons turmeric powder turmeric, half of the 1 teaspoons chaat masala, divided chaat masala, and half of the 0.3 teaspoons black salt, divided black salt. Stir for a few seconds until fragrant โ don't let the spices burn, this takes about 10โ15 seconds.
- Coat makhana with spices: Add the roasted, cooled makhana back into the pan with the spices. Toss everything together for about 2 minutes 02:00 until every piece is evenly coated in the spice mix. Turn off the heat and spread the spiced makhana on a plate to cool completely to room temperature before the next step โ this keeps it crunchy.
- Prep the vegetables and toppings: While the makhana cools, get everything else ready: finely chop the 0.5 cups onion, finely chopped onion, 0.5 cups tomato, deseeded and finely chopped tomato (scoop out and discard the seeds first), and 0.3 cups cucumber, finely chopped cucumber. Measure out the 0.3 cups roasted peanuts roasted peanuts, 2.5 tablespoons green (mint-coriander) chutney green chutney, 2.5 tablespoons sweet tamarind-date chutney tamarind chutney, 0.3 cups thin sev sev, 2.5 tablespoons coriander leaves, chopped coriander leaves, and 2 tablespoons pomegranate arils pomegranate arils so they're all within reach โ once you start mixing, you'll want to move fast.
- Combine makhana with vegetables: In a large mixing bowl, combine the cooled spiced makhana, chopped onion, tomato, cucumber, and roasted peanuts.
- Add chutneys, lime, and spices โ mix quickly: Add the 2.5 tablespoons green (mint-coriander) chutney green chutney, 2.5 tablespoons sweet tamarind-date chutney sweet tamarind chutney, 1 tablespoons lime juice lime juice, and the remaining 1 teaspoons chaat masala, divided chaat masala and 0.3 teaspoons black salt, divided black salt. Toss everything together quickly and gently so the makhana doesn't get crushed โ just enough to coat everything evenly. Taste and add a little more chutney if you want it sweeter or tangier.
- Plate and garnish: Transfer immediately to a serving plate or bowl. Sprinkle generously with 0.3 cups thin sev sev, then scatter the 2.5 tablespoons coriander leaves, chopped coriander leaves and 2 tablespoons pomegranate arils pomegranate arils on top for color, crunch, and freshness.
- Serve immediately: Serve GT Makhana Bhel right away, while the sev and makhana are still crunchy. This dish turns soft within 15โ20 minutes of mixing, so only assemble it just before you're ready to eat โ it does not store well once combined.
Notes
Tips for beginners:
- The crunch of this dish depends entirely on two things โ roasting the makhana until it snaps cleanly when you crush one between your fingers, and mixing in the wet ingredients (chutneys, lime juice) only at the very last minute.
- Use thick chutneys, not runny ones โ thin chutney makes the whole bowl soggy fast.
- This dish does not keep โ make the spiced makhana ahead if you like, but only assemble the final bhel right before eating.
- No chutney on hand? A quick swap: mix a little ketchup with lime juice and a pinch of sugar for the sweet-tangy element, though homemade chutney tastes much better.
